Last night, our winning pitcher thew 1 total pitch for the night. I have never seen it before and was wondering if anyone else had ever seen this or what the fewest is that you've seen in person.

Fewest pitches would be 0. Pickoff a runner or two to get out of an inning with zero pitches and then have your team come back to go ahead and end the game (or finish with a different pitcher).
Dean Stone did it in the 1954 All-Star Game. He did throw to catcher Yogi Berra to nail a runner, but was not credited with a pitch.

It is rare but I have seen it before. Also, I am pretty sure that a pitcher in the major leagues once threw zero pitches and got a win. He came into the game with two outs in an inning, picked a guy off first before throwing a pitch for the third out. Then the team won the game for him their next at bat.
Hopefully your winning pitcher had enough left in the tank to pitch the next day:)!!!!

i take it he came in in the last inning or something and got the last out while it was tied, and his team scored in the bottom of the same inning?

Visiting team scores 2 runs in top of 4th to tie game 5-5. Relief pitcher comes in with 2 outs, throws 1 pitch for a ground out to end the inning. The home team scores 15 runs in the ensuing bottom of the 4th. A new pitcher comes in and finishes the game in the top of the 5th.
